chicken wild rice soup cooking light



hi this is tony again from cookinground and welcome back to my kitchen today we are going to make is a pasta dish and we are going to use penne and what is it going to be, it will be a mushroom sauce


chicken wild rice soup cooking light, and with some nice onions and a bit of butter and you will see how it is going to turn out it will be absolutely awesome. so !!


with out any further delay, let's get started. ok here we are. pan is getting hot, we add about say about 1/2 teaspoon of olive oil or any kind of oil you want. and we take 1 onion and put it there and wait for it to get hot. all right you can see it is sizzling. i take 1/2 of a small to medium onion i diced it as fine as possible


if some pieces are a little bit larger, do not worry about it. food inspector is not around today. and that goes in there and what i do i turn the heat down to low on this one and we stir that for about 30 seconds. add about 1/4 cup of unsalted butter you can add more or less depends on what you want.


it is still a little to hot so i bring it down now we do not want to burn the onions so if it gets a little hot like now i left it up a little bit because i want to satay the onions and i want them to satay very slowly until they be come clear a bit so again if it becomes a little hot because of this gas stove then left it up. ok and i take one clove of garlic


that i used this handy dandy contraption and that goes in right now mix that up and that smells absolutely awesome so now i add the mushrooms you can use any type of mushrooms you want, chop them down like this i am using this kind that i call in canada button mushrooms. and in it goes and now


i will cook this nice and slow until everything absorbs in or i say 5 to 10 minutes depending on how the mushrooms become tender this is coming out really really nicely now if you want you can add more butter


at this stage if you want but so since i will be adding cream towards the end i do not want to add anymore butter at this point. i will be going to add salt basically when the mushrooms are done now a lot of people can argue with me and they want to but the salt in now


but this is the way i do it . someone on youtube said well " i have been on since 2016 and i have never seen anyone do that " well then you know you follow their instructions. this is the way i do it... now you can see that it is almost coming along. becoming soft.


there almost there i would say another 2 to 3 minutes and they will be perfect. ok !! now you can see that there really really soft, so now i will add about 1/2 teaspoon of salt. about 1/3 teaspoon of black pepper fresh remember move that all around that smells good


and now, i increase the heat a little bit take some cream at 12 % but you can use 18 % if you want our you can use that 1/2 and 1/2 the kind you use for coffee. now i know thats this is chocolate brown but its cream, do not be concerned. and i put in maybe what ? say about 1/3 to 1/2 a cup. there we go, and


let's move that around now at this point i really do not want to use anymore cream so what i like to do after this point after it has been cooking anywhere from 45 seconds to any where from a minute to minute and a 1/2. is i now like to top it up with milk. because in this way i can control the thickness


of the sauce how i like it now bring it down to low. now let that cook for awhile boy is that looking good. hmmmm smiles really good. and i take 1 tablespoon of all purpose flour


use whole wheat flour if you want and i add that into the mixture to make it a little more thick. now at this point you can add some other goodies that you want of course you can add you know red pepper, zucchini, but when i make a mushroom sauce,,, i like to taste the " mushrooms "


now notice how it is starting to get thick if you want it to be a little more thinner i would advise you to add a little more milk. more at this stage. so once you turn off the heat, it will become thicker , now take a little chopped green onions just a little to give it some color and some greatness.


and i mix this in, now look how that is starting to look is that not absolutely awesome . that's basically it, i will put this on my pasta, penne or spaghetti in a bowl or plate what ever you like. and we are back here, are sauce


if you notice the sauce did become a little more thick, that does not matter because as we transfer some of the penne there will be water from the pasta and it will loosen up a bit . so now here is our penne just follow the instructions on it and we turn that off now what i like to do at this stage is


i do not drain it, i do is i have the heat going here on medium take it like this because i want a little of the water water that has the starches to go into, so what i use instead of straining and please do not strain it


under cold water or any type of straining with water. but if you want to, then go right ahead but i would never advise that. and now we just. blend that all in and incorporate, like this see how that sauce is coming now. and the water from


the pasta was perfect becasue it contains starches that helps thicken it up and helps glue all this together and there we have it. shut off the heat, let it sit for bout 5 minutes and it is ready to serve.
